Preparation process
  1. Mix in a bowl strained tomatoes, coarsely chopped onion and finely chopped garlic.
  2. Add oil and spices (oregano, thyme, salt, pepper).
  3. Cut eggplants, peppers, zucchini and tomatoes into slices.
  4. Pour In a large ovenproof dish (or two metal ladle) a liquid mixture, alternately stratify vegetables and season.
  5. Bake for 35 minutes covered with a baking paper and 15 minutes without paper at 200 °C
  6. To taste, we can also add eggs and cherry tomatoes few minutes before the end.
