Baked Couscous pudding

300g (wholemeal)
500 ml
Greek yoghurt
300g (plain- zero fat)
3 pieces
according to taste
Ground cinnamon
Lemon peel
1 tsp.
Preparation process
  1. Heat the milk in a pot to approximately 80 °C and put it aside.
  2. Add couscous, gently stir, cover with a lid and allow it to soak up.
  3. After 5 minutes use a fork to fluff the couscous up let it cool down.
  4. Break the eggs and separate the egg whites from the egg yolks.
  5. Mix yogurt, yolks, sweetener and salt.
  6. Mix couscous into yogurt mix, add lemon peel and cinnamon.
  7. Beat the egg whites until they form soft peaks and gently mix into the dough.
  8. Bake for approximately 40 minutes at 180 °C on the greased and floured baking pan.
  9. Decorate according to taste.
  10. We used pickled cranberries and gently sprinkled with vanilla protein powder on the top.
