Broccoli puree with vegetables

Ingredients
Puree
Broccoli
700 g
Water
Onion
1 piece
Garlic
1–2 cloves
Salt
Pepper
Curry
Coconut cream
can be also soy or rice (not mandatory)
Vegetables
Brussels sprout
300 g (halves)
Green asparagus
10 pieces
Mushrooms
100 g (mix of your favorite mushrooms)
Olive oil
Salt
Pepper
Preparation process

PUREE:

  1. chop the broccoli and onions
  2. saute the onion on oil
  3. add water, broccoli and grated garlic
  4. season and cook for about 10 minutes
  5. with a hand mixer blend to desired consistency.

 

VEGETABLES:

  1. put a baking paper on a baking sheet and preheat the oven to 190 °C
  2. mix mushrooms and asparagus with oil and store on 1/2 of the baking sheet
  3. mix oil and sprouts, and spread out on the second half of the baking sheet
  4. season to taste and bake for about 20 minutes. After 20 minutes remove asparagus and mushrooms, the sprouts come back in the oven for another 10 minutes
  5. serve
