Coffee Muffins

Ingredients
Spelt flour
200g
Protein
50g (latte flavour)
Milk
170ml
Egg
1 piece
Greek yoghurt
140g (fat free)
Ghee
40g (butter/ coconut oil)
Dutch cocoa
10g
Instant coffee
2 tbsp.
Baking powder
10g
Salt
pinch
Sweetener
equivalent to 40g of sugar (stevia, erythritol...)
Preparation process
  1. Mix together flour, protein powder, baking powder, Dutch cocoa, and salt.
  2. In another bowl, mix eggs together with sweetener and add to the dry ingredients.
  3. Make a dough.
  4. Add yogurt, dissolved ghee (butter) and add instant coffee.
  5. Bake for 25-30 minutes at 180 °C in silicone molds.
  6. Muffins taste best chilled from the fridge, decorated with Greek yogurt.
