Ingredients
Spelt flour
170g
Protein
50g (Vanilla) - can be replaced by flour
Butter
70g (Ghee)
Earl Grey tea
4 tea bags
Egg
1 piece
Sweetener
equivalent to 40g of sugar (stevia, erythritol...)
Rice syrup
1 tbsp.
Salt
1/4 tsp.
Lemon peel
1 tsp.
Aroma
1/2 tsp. (vanilla)
Preparation process
  1. Mix flour, protein, and salt together.
  2. Add tea leaves from four Earl Gray tea bags.
  3. Let the butter warm to the room temperature and whisk together with the sweetener, lemon peel, and aroma.
  4. Add the created mixture to the butter and use hands to create a loose mixture,
  5. Whisk eggs together with the rice syrup and add to the doug.
  6. Use hands again to make a dough.
  7. Transfer the mixture to a parchment paper and roll into a log (about 2,5- 3cm in diameter).
  8. Wrap the log into a plastic wrap, and let chill for at least an hour.
  9. Remove the dough and cut into thin wheels (about 30 pieces will be produced).
  10. Line cookie sheets with parchment paper and let them cook for 12-15 minutes at 175 °C - the margins of the biscuits will be slightly golden.
