Kefir
150 ml
Grated coconut
50g
Coconut flour

Almond flour
20g (grated almonds)
Coconut oil

Sweetener
equivalent to 40g of sugar (stevia, erythritol...)
Salt

Cream
Curd cheese

Milk
500 ml
Pudding
1 package (coconut flavour)
Gelatine fix
1 package (50g)

Preparation process
  1. Make pudding according to the instructions and add preferred sweetener (instead of regular sugar).
  2. Mix all dry ingredients for the corpus.
  3. Separate the yolks from the egg whites.
  4. Mix the egg yolks with oil and kefir.
  5. Add a pinch of salt to the egg whites.
  6. Beat the egg whites until they form soft peaks.
  7. Mix the dry ingredients thoroughly with the yolk mixture and then gently mix with the snow.
  8. Bake on the greased and floured baking pan for approximately 30-35 minutes at 175 °C.
  9. Mix the chilled pudding with curd and sweeten according to taste.
  10. Prepare the stiffener according to the instructions and add to the curd.
  11. Apply on a cake, garnish with grated coconut and Raffaello.
  12. Serve chilled.
