Ingredients
Dough
Spelt flour
125g
Fresh yeast
15g
Coconut oil
40g (Rapseed olej)
Cane sugar
15g
Milk
60ml
Salt
pinch
Filling
Xylitol
40g
Ground cinnamon

Preparation process
  1. In a large bowl, stir together the yeast and milk until dissolved.
  2. Beat in the sugar, oil, and salt until well combined.
  3. Add the flour gradually and stir until well incorporated. The dough will be shaggy and still sticky. Add milk if desired.
  4. Turn out the dough onto a floured surface and knead 5-6 minutes until smooth and elastic. Or if you use a mixer knead 4-5 minutes.
  5. Cover and let rise for 1- 1,5 hour or until doubled in size. The length of time needed to rise will depend on how warm the room is.
  6. Roll the dough into a rectangular shape (into approx. 0.5cm thickness )
  7. Grease the surface of the dough with oil and sprinkle with a mixture of xylitol and cinnamon
  8. Roll the dough into a cylinder shape, starting with the bottom edge, and then cut into 12 slices.
  9. Place the slices onto a baking sheet and let them rise for another 20min.
  10. Bake in a preheated oven at 180 °C for approximately 20-22 minutes
