Coconut Chicken Curry

Ingredients
Chicken breast
1 kg
Olive oil
30 ml
Coconut milk
400 ml
Baked tomatoes
200 ml
Onion
1/2
Garlic
2 cloves
Curry
2 tbsp.
Zucchini
1/2
Red pepper
1 piece
Lime
1/2
Grated coconut
50g
Cane sugar
2 čl. (Coconut sugar)
Coriander
according to taste
Ground ginger
according to taste
Basil
1 čl. (sušená)
Salt
Pepper
Preparation process
  1. Mix the oil with curry spice and heat in the pot.
  2. Add chopped onion, pressed garlic and fry for a while.
  3. Add chicken breast cut in cubes and let it rest for about 7-10 minutes.
  4. Add coconut milk, pasted tomatoes and add spices, salt, and basil according to taste.
  5. Cook for about 40 minutes.
  6. Cut zucchini, spoon out the inside and cut into moons.
  7. Cut the pepper into cubes.
  8.  Just before the finish of the cooking process, add lime juice, sugar, zucchini, pepper and thicken by using the coconut milk.
  9. Serve with your favorite type of rice  :)
